You create a 'virtual' memory card on the disk (easy to do, under Games on the XMB), and the PS2/PS games will be saved to that.
To copy existing game saves from the PS2 memory sticks, I think you need an adapter, though I've never bothered trying this.

they are virtual memory cards where files get saved to the hard drive.
you have to set them up though, you can create virtual ps1 and ps2 memory cards. just remember that like a real memory card, you should have some free space for saves. the virtual cards still respect the real cards size limits (like 8mb for a ps2 memory card)

If you're trying to just play new files then all you need is the HDD and the PS2 data utility software off the PSN store and you should be fine. There is no data utility for PS1 games as that software is built into the PS2 data utility software. If you're transferring old PS1 and PS2 saves then you'll need the memory card adapter for the PS1 and PS2 games. Hope this helps out.
By the way, you'll have to make virtual memory cards for PS1 and PS2 games. It pretty much works like a sub-patition and you'll have to make seperate virtual memory cards for PS1 and PS2 game saves. Don't worry about space as you can make as many virtual memory cards as you want. Just make sure to assign a virtual slot so you can actually save your games when playing them. ;)

the ps2 data utility?
you dont need that, thats for compatibility with the like 2 games for ps2 that used the hard drive. its so you could use the install option for them.
