Fairly new to anime. I prefer the series to the movies. Hoping you guys can point me to some more quality shows. Here is some anime that I have enjoyed in the past:
Berserk
Death Note
Hellsing
Elfen Lied
Not much, but maybe that gives you an idea of what I like: dark and heavy. Haven't been able to get into Cowboy Bebop, Trigun, or some of the lighter series. Any recommendations get a +rep. Thanks.

Have you seen Hellsing Ultimate aka Hellsing OVA?
Its much better than the series.
Its only 3 episodes right now.
Episode 4 comes out feb 22nd.
Each episode is around 50 minutes.
Seems you like action.
Try Claymore its 26 episodes its like berserk but not as dark.
Fullmetal Alchemist is one of my favs.
Good story and characters, could have used a little more action but still very very good.
FMA is 51 or 52 episodes i cant remember and it has a movie that takes place after the series.
I hate mech anime but there are 2 mech animes i really like and i think people should try.

VanDread is 2 seasons of 13 episodes so 26 in total
Tengen Toppa Gurren Lagann is 27 episodes.

Baccano! 13 episodes, it's worth it. Maybe not that dark, but I highly recommend it!
Some like Blood+, it's kinda dark... personally I didn't like it, I literally sat and laughed at all the serious stuff which I for some strange reason found amusing. But maybe that can be something for you. (it's not as badass as Elfen Lied or Hellsing tho).
Well and as HellsJester said, Claymore could probably fit your taste.
Karas is also a something that may fit you, it's 6 episodes with really ambitious effects.
Even tho it isn't dark I would strongly recommend Tengen Toppa Gurren-Lagann. Really fun! 27 episodes (As mentioned by HellsJester)

Black Lagoon is a great action anime, which you would probably enjoy.
Monster, I keep recommending this to anyone and everyone, but they keep getting put off by the 74 episode count, if you really liked Death Note, you should like this more.
and Im very suprised everyone has missed out the obvious Ghost in the Shell a classic film and a classic series, cant go wrong with GitS.
I would also second the opinion of Claymore.

Awesome, none of those will dissapoint, well, possibly Ergo Proxy. Apparently Monster is going to be finally licensed in a America soon.

I have to agree with Dave, Ergo Proxy is brilliant and one of my favourite anime's ever personally.
Monster has been licensed by Viz Media btw.

I second Monster, there isn't much action but the story is one is probably one of the deepest in any anime and manga.

Sorta, kinda...
The fights aren't that great(still better then the 20 episode DBZ fights though).
One Peice is better IMO, if you just want something that's currently running and is 100+ episodes long. The dub is pretty bad though.
Since your an MGS fan, Ghost in the Shell might be something you like, especially if you liked MGS2. Just prepare your self for a lot of dialoug

I do watch One Piece, I've watched it up to 104 episodes but then the voices on the dub changed and the characters just didn't feel the same to me. I'll start watching it again sooner or later.
I'll check out a few episodes of Ghost in the shell. +rep for the help.

For GitS there three movies and two 26 episode series, The first two movies are standalone while the the series and the third move (Stand Alone Complex) are continious and share a lot of themes with MGS.

I have to watch it again really, cause the subs where weeks apart at the time and I kept forgetting parts of the story, making it unenjoyable.

Well Bleach has 158 episodes right now so if you really want to catch up through all that then go ahead.

Started watching Ergo Proxy. Wow. Really great stuff. Love the animation. Excellent story as well.
Like Claymore as well. Not crazy about Raki. Dude's crying reminds me too much of that little punk in Neon Evangelion. Meh....it's early though. Maybe he'll grow a pair soon.

Raki is nowhere near as bad as Shinji, I hated Evangelion because of him, whiney little.....:evil:

Tengen Toppa Gurren-Lagann is freaking fantastic.... also i just checked out Gantz for the first time.... crazy crazy stuff... if you like psychological thriller types... Gantz is up there... really graphic though... with a very hard "not for anyone under 18" for violence and sex
also Ghost hound is amazing (done by Production I. G.)

Those are the ones that I can remember off the top of my head that weren't mentioned earlier. Kenshin, GTO, and Prince of Tennis are probably my favorite animes.
I am currently watching Yakitate Japan and it's pretty funny.
